How do you Salt?

Do you only add salt at the table? Do you like to season the pan? Do you add salt to fruit? Ever wondered why your margarita glass has a rim of salt?

Did you know that by adding salt to the rim of your cocktail it helps control the bitterness and enhances the sweet and sour notes…? Salt beautiful salt can change the way you experience flavour in your food.

So where else does salt get applied ..? Perhaps on your steak before cooking, this is called seasoning. Seasoning can be done in a number of ways either on the food before you cook or directly into your pan, throughout the cook or at the end. knowing when and how is about experimenting and of course tasting your food throughout the cook.

Let’s say you are cooking an omlette, you have mixed your eggs, cut up your filling and chopped your garlic and onion, when would you add the salt? For me it’s the beginning… salt, pepper, butter, onions, garlic and herbs, then I add the egg and so on… no more salt is usually needed because I seasoned it at the beginning and it opened up all the flavours.

*Did you know some cultures like the french have a specific omlette pan - that is seasoned and which the flavour grows over time and use.

When would you add the salt? The next time you cook ask yourself this question and see how your flavour changes for each cook. It’s a game changer!!

RECIPE

Yuzu Margarita .

2 serves - Using a Pickle Jar (500ml) *or halve the recipe if using a cocktail shaker

INGREDIENTS

2 shots of Tequila (100% Agave - or you will have a sore head)

15-20mls of YUZU - (this depends on the Yuzu concentration, more you add the more citrus and peel like flavour)

30mls of sugar syrup (or sometimes I use mirin)

30mls of lime juice

METHOD

Add all ingredients to a pickles jar of 500ml.

Add half Ice - If using the pickles jar I also add around 100-150mls of some filtered water

Shake, shake, shake - you want the ice to make froth and cool the ingredients.

On a separate plate pour a tbsp of salt or more, add finely grated lemon skins (microplane), use a lemon quarter to wet the rim of a glass of choice and push into the salt….

Voila!

I like to add a strip of lemon or lime for decoration and colour.
